ISO stands for "International Organisation for Standardisation" and is concerned with "quality management".
HACCP stands for "Hazard Analysis and Critical Control Points" and is a state-of-the-art approach to Food Safety. The system offers a number of advantages the most important being the following:
(a) Focuses on identifying and preventing hazards from contaminating food and is based on sound science.
(b) Permits more efficient and effective government supervision primarily because the record keeping allows inspectors to see how well a firm is complying with food safety laws and regulations over a period rather than how well it is doing on any given day.
(c) Places responsibility for ensuring food safety on the food manufacturer or distributor as well.
